Pineapple BBQ Chicken Foil
This meal was really simple & fun to make. It's savory, sweet, and quick
Ingredients you will need:
- 2 Skinless, boneless chicken breasts
- 1 Cup pineapple chunks
- 1 Green bell pepper
- Pink Himalayan Salt + Black pepper
For the sauce:
- 1/2 cup of BBQ sauce
- 2 Tablespoons of olive oil
- 2 Tablespoons of lime or lemon juice
- Cilantro, minced
Pre-heat the oven to 350°F. Lay down the 12x12 inch aluminum foil square on your counter. Place the chicken breast in the middle of the foil. Add salt & pepper to the chicken, I squeezed a little lime on my chicken. Place the pineapple chunks on the side of the chicken breast and bell pepper slices on the other side of the breast.
In a bowl throw in the bbq sauce, olive oil, lemon or lime juice, and minced cilantro. Mix it all together and pour the sauce on top of the breast.
Once the vegetables, chicken, and sauce are all in the foil, wrap it up tight to prevent the foil from leaking. Keep the foil in the oven for 30 minutes.
After the foil is done cooking, serve immediately and enjoy! Be careful the foil will be piping hot
